How to bake in a closed pan without fear


This pan is suitable not only for Shokupan and toast bread but also for various types of sourdough milk doughs. For the perfect result, place the dough into the pan for its final proofing – filling it to approximately two-thirds of its height. Let it rise under the lid and bake at 180 to 200 °C for about 30 to 35 minutes. After baking, leave it in the pan for a few minutes, then turn it out and let it cool completely on a wire rack.
