But they lack the shape, the strength, and that signature pattern on the crust that says: this bread was baked by someone who knows what they’re doing. The proofing basket changed all that.

Rattan wicker wicks moisture away from the surface of the dough during proofing. That is the key. A drier surface means a sharper score, a more dramatic bloom in the oven, and a crust that truly crunches. Plastic baskets trap moisture, causing the dough to sweat and flatten out once flipped. A rattan basket works *with* the dough, not against it.

The small round rattan proofing basket (23 cm diameter) is the ideal choice for home and artisanal baking of loaves weighing around 600 to 750 grams. Its traditional shape encourages even rising and ensures a beautiful rustic look. It includes a fabric liner, which you can use either as a lining or to cover the dough to prevent it from drying out. The large round proofing basket can hold up to 900 g of dough.

How to keep your proofing basket clean.

Simple care keeps your proofing basket looking (and working) like new:

  • Drying after proofing: Never store your basket while it's still damp. Let it dry out completely in a warm, dry spot—the top of a cooling oven is the perfect place for this.
  • Brushing out flour: Once the basket is dry, simply brush out any excess flour with a stiff kitchen brush. Use water only on very rare occasions, and if you do, make sure the rattan dries out thoroughly afterward to prevent mold.
  • Washing the liner: You can wash the fabric liner by hand or in the machine. Just remember to skip the fabric softener—you definitely don’t want your fresh sourdough picking up the scent of "spring meadows."
