Gazpacho – a light cold soup from Spain

Gazpacho is an iconic cold soup from Andalusia and one of the most famous Spanish recipes .

This cold soup is the perfect lunch in the summer heat when you just need something light but also really good. I put together this recipe after visiting Spain a few years ago, where my husband and I were truly enchanted by the gazpacho. It's full of vegetables, very healthy and as a bonus? Extremely quick to prepare.

We love to prepare this cold gazpacho soup when we have an unexpected visitor in the summer and I know I always have all the ingredients at home. Gazpacho is simply the perfect summer recipe – quick, refreshing, full of fresh vegetables and flavors that will instantly transport you to the sun-drenched Mediterranean coast.

Cold gazpacho soup recipe

Servings: 8 people

Ingredients:

2 red peppers
1 green pepper
4 tomatoes
1 white onion
1 garlic
1.5 dl olive oil
5 slices of dry leftover sourdough bread or white bread (you can also substitute oven-dried toast bread)
Wine vinegar (can be replaced with apple cider vinegar)
cumin
salt
a handful of ice cubes

Procedure:

1) Cut the vegetables into larger cubes.

2) Throw everything except the ice into a blender and blend until smooth.

3) Let sit for 10 minutes, then add a handful of ice cubes and mix well to break up the ice until smooth.

4) Serve immediately and drizzle with good quality virgin olive oil.
