Whether you're baking fruitcake, yeast-raised cakes, or a sponge cake, crumb topping is always the perfect crunchy contrast to the soft dough and juicy fruit.

A simple step-by-step process for making crumbs

Ingredients for the crumb

60 g semi-coarse wheat flour
40 g cane sugar
40 g cold butter

Procedure

Quickly rub the flour, sugar and cold butter between your fingers. You will have a mass that you can simply sprinkle on the cake batter before baking and you're done. PS: check out the tips below.

The butter must be really cold - this is the only way the crumb will have a beautifully crispy texture.
