Extremely soft banana bread with sourdough for Sunday baking

I've been trying to find the best banana bread recipe for a long time, until I finally came up with my own. This recipe for soft banana bread is something we love in our house . It's always a sure bet that even my husband will love it. And that's saying something.

It's the perfect recipe when you don't know what to bake with bananas. I've baked this bread many times and every time I'm surprised at how good and soft it is. I would classify it as grandma's pancakes with a modern twist. It smells wonderful of baked bananas and is enhanced with pieces of melted chocolate.

Once, on vacation, I tasted some banana bread and had no idea what I was getting into. I thought it was our bread with bananas in it and had no idea that it was a sweet version of the dessert. But its taste stuck in my memory. I then tried to bake countless sandwiches at home, I probably tasted even more, but this, this sandwich is the closest to my dream one in terms of taste. Come bake with me and taste the banana bread that I first tasted in Sri Lanka in 2012. On our first exotic vacation, where we celebrated our 20th wedding anniversary. So it was more like a honeymoon, only after 20 years :-).

Why do I love this soft banana bread?

✓ Ideal when you don't know what to bake with bananas
You can use up ripe bananas that no one wants anymore (and yet they are absolutely key in this recipe)
✓ You can use the rest of the yeast – even the one that is no longer suitable for sourdough bread, but is suitable for banana bread
✓ One bowl, one mold and one great sandwich, and it's a really simple recipe
✓ Great for breakfast, a snack, or as a baked banana treat with evening tea

Banana bread recipe with sourdough

Servings: 10 servings

Ingredients

– 3 ripe bananas
– 1 egg
– 70 g melted butter
– 1 teaspoon vanilla essence
– 35 g of wheat yeast (optional, so don't worry if you don't have it)
– 200 g plain wheat flour
– a pinch of salt
– 75 g sugar
– 1 teaspoon of bicarbonate of soda (baking soda)
– 70 g dark chocolate
– 70 g nuts – cashews / almonds / hazelnuts

Procedure

1) Turn on the oven to 175 °C . Prepare a smaller loaf pan and line it with baking paper.

2) Mix 2 mashed bananas, eggs, butter and essence. Then add yeast and finally flour with salt, sugar and baking soda. As a cherry on the cake, mix in finely chopped chocolate and nuts. Combine everything into a compact mass.

3) Transfer the dough to a baking sheet lined with baking paper, decorate with a halved banana, sprinkle with cane sugar and put in the oven.

4) Bake for 55 minutes, check for doneness with a skewer and it's DONE. Perfect banana bread is here!

Just pay attention to two things to make sure it works out to the last crumb:

  1. Don't be stingy with bananas - they must be very ripe, the skin may have brown spots, and the banana may be completely soft to the touch. This is the basis of softness and sweetness.

  2. Do not overbake the bread – every oven bakes a little differently. After 50 minutes, prick it with a skewer. If it comes out dry (not from the chocolate, but from the dough), it is done.

The bread is best when it has cooled down, but the day after baking, the bread has its undeniable advantages – the flavors blend beautifully. The yeast, on the other hand, ensures super softness, if you don't have yeast, nothing happens. Roasting the nuts before adding them to the dough gives the bread a fantastic flavor.
