Once the first batch is baked, the same question arises sooner or later: how long do Linzer cookies last. Whether you bake according to a classic recipe or more modern versions with cream or citrus fillings, the key is how and where you store them. Linzer dough dislikes both heat and enclosed damp spaces—it is happiest in a dry and slightly cool environment, where it can rest and soften while remaining tender.

The quality of the dough matters

The shelf life of Linzer cookies begins with the dough itself. If you want them to remain tender and melt on the tongue even after several weeks, it pays off to reach for truly high-quality flour with a fine structure and low gluten content—for example, Farina per Dolci by Molini Pizzuti. Coolness is key

Cookies require coolness—ideally around 10 to 16 °C. A pantry, attic, balcony, or an unheated room are ideal spots. While they last longer in the refrigerator, they easily absorb the odors of surrounding food. If you still choose to store them in the fridge, use tin or glass boxes with lids and give each type its own space.

When to sandwich and with what

Feel free to bake your Linzer cookies in advance, but do not sandwich them all together right away. Keep the individual pieces in a dry and slightly cool place. Fill them with marmalade or cream only a few days before Christmas. Linzer cookies actually taste best 2–4 days after being sandwiched—that’s when the flavors of the dough and filling meld, the cookies soften, but still remain tender.

Unfilled types—such as Bear Paws, crescents, or the plain baked Linzer pieces—last 3 to 5 weeks. Linzer cookies sandwiched with marmalade last roughly 2 to 3 weeks, while cookies with butter or pistachio cream are best consumed within 10 to 14 days. Cream simply shortens the lifespan but adds a nobility to the cookies that you will appreciate during festive serving.

How long they last in the freezer

Unfilled Linzer cookies can easily be frozen. They last up to 3 months in the freezer if you store them in a closed box layered with parchment paper. Thaw slowly at room temperature to prevent the dough from becoming soggy.
